i found this recipe somewhere they are easy to make and gooood..................
Cook Time: 15 minutes
Ingredients:
Bottom:
4 ounces cream cheese, at room temperature
1 egg, at room temperature
8 Tablespoons butter, melted, but at room temperature (1 stick)
1 box (18.25 ounces) French vanilla cake mix
.
Filling:
2 (8-ounce) package cream cheese, at room temperature
3 eggs, at room temperature
1-1/2 cups powdered sugar
2 teaspoons vanilla extract
.
1 can (21 ounces) extra-fruit blueberry pie filling, drained
Preparation:
Preheat oven to 350 degrees F. Line mini-muffin pans with papers.
For the Bottom:
Cream 4 ounces of cream cheese, 1 egg and butter together on low speed until combined, about 1 minute. Blend in cake mix by hand until combined. It will be very thick, but piable like a soft dough. Press 1 teaspoon mix into bottom of each mini-muffin paper.
For the Topping:
Place cream cheese, 3 eggs, powdered sugar, and vanilla in a small bowl. Begin mixing on low speed until sugar is incorporated. Increase to medium speed and beat until smooth, at least 3 minutes or longer if need be. Drop about 1/2 Tablespoon of mix into each muffin cup over vanilla base. Press 2 to 3 drained blueberries into the filling in each muffin.
Bake at 350 degrees F. for 15 to 17 minutes. Cool completely before serving.
Yield: about 6 to 7 dozen mini cheesecakes

Those that attended were: April (SCF), CathyAnne, Donna (d4jason), Gloria (glotrovato), Rachel (Rereader) & Christine (figureskater930) and her Cook fan friend had fun with us too. The husbands were taking the pics and video ha ha oh, and FlatJason was there too lol ;D

Here are some brownie recipes my son-in-law brought with him when he joined the family: WAFFLE BROWNIES
3 Tb cocoa
2 cubes margarine
Melt together
1 cup sugar
2 cups flour
1/2 tsp salt
1 tsp vanilla
Mix all together, cook in waffle iron on light brown setting for 3 to 4 minutes. Can be frosted.

CARAMEL BROWNIES
50 caramels
1 German Chocolate Cake mix
3/4 cup melted margarine
2/3 cup evaporated milk
6 oz chocolate chips
Mix margarine, 1/3 cup of the milk, and cake mix together. Put half of batter in bottom of 9X13" cake pan and bake at 350 degrees for 6 to 8 minutes. Melt caramels and the rest of milk and melt together in double boiler (or microwave.) Pour melted caramel over cooked batter, and sprinkle with chocolate chips. Crumble the rest of dough on top. Finish baking for 15 to 18 minutes. Cool and cut.
